More and more hipster cafes are popping up around Singapore. But the old-school coffee shop selling Hainanese kaya toast and coffee are slowing disappearing as time goes by.

Hup Lee coffee shop along Jalan Besar will close on 22 August. They are famous for their kaya toast which is grilled on a charcoal fire grill. Their coffee is also brewed in a sock the traditional way.
The shop house unit that they are occupying has been sold and their 68 year old o-owner Madam Foo Mui Ya is retiring because her health is deteriorating.
Regular goers know that only Madam Foo can do the coffee and toast the right way.
The coffee shop has been open since the 1950s and was started by Madam Foo’s grandparents. They passed it to her and her brother in 1976.
Soon, all these old-school coffee shops, including others like Heap Seng Leong along North Bridge Road will be gone, taken over by redevelopment, or by some young entrepreneur who will turn the space into a hipster cafe or bistro.
